SWEET & Sour Chk sauce
I'm posting this cuz i can never find or remember the measurements

Taco Seasoning
Ingredients
1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon dried oregano
1/2 teaspoon paprika
1 1/2 teaspoons ground cumin
1 teaspoon sea salt
1 teaspoon black pepper
Directions
In a small bowl, mix together chili powder, garlic powder, onion powder, red pepper flakes, oregano, paprika, cumin, salt and pepper. Store in an airtight container.

2 ingredient pumpkin muffins
1 small can of pumpkin (not the pie filling)
1 box of spice cake mix
Mix together completely. divide into 12 sprayed muffin tins. bake in preheated oven at 400 degrees for 20 min.
*If my kids have them for breakfast they don't get frosting on them. if they have them after school or for dessert we put some cream cheese frosting on them and call them cupcakes!*

Blackberry Yogurt Muffins

Ingredients:
3 tablespoons coconut oil/butter
3 tablespoons softened butter
3/4 cup granulated sugar
1/2 teaspoon vanilla extract
2 eggs
1/2 cup non-fat plain greek yogurt
2 tablespoons milk
1 teaspoon baking powder
1/4 teaspoon baking soda
pinch salt
1 1/4 cups all purpose flour
1 cup fresh blackberries
3 tablespoons coconut oil/butter
3 tablespoons softened butter

1/2 teaspoon vanilla extract
2 eggs
1/2 cup non-fat plain greek yogurt
2 tablespoons milk
1 teaspoon baking powder
1/4 teaspoon baking soda
pinch salt
1 1/4 cups all purpose flour
1 cup fresh blackberries
Directions:
Preheat oven to 350 degrees. Line 12 muffin tin cups with paper liners and set aside.
In large bowl, mix coconut oil and butter together. Cream with sugar until light and fluffy. Stir in vanilla, eggs {1 at a time}, yogurt and milk. Scrape edges and mix again until smooth. Pour in all dry ingredients and mix until just combined. Scrape edges and mix by hand to ensure batter is evenly mixed. Stir in blackberries gently. Scoop by the tablespoon into prepared muffin tins evenly.
Place into preheated oven and reduce temperature to 325 degrees. Bake 20-25 minutes or until toothpick comes out clean when inserted. Cool 10 minutes and serve.

DIED AND GONE TO HEAVEN
a.k.a. Chocolate Trifle
Brownies:
(you could just do box brownies, but I promise these homemade make it SO much better!)
- 1 cup butter (2 sticks)
- 2 cups sugar
- 4 eggs
- 1-1/2 tsp vanilla
- 1/2 cup cocoa
- 1-1/3 cup flour
- 1/2 tsp salt
Cream butter and sugar together. Add eggs and blend well. Add vanilla, salt, cocoa, and flour. Don't over-beat. Pour into a greased 9x13 pan. Bake at 350 F for 20-25 minutes or until done. Cool completely.
Once brownies are cooled completely cut into 1 inch squares.
Remaining ingredients:
- 1 (3.9 oz) box instant chocolate pudding mix
- 1/2 cup water
- 1 (14 oz) can Sweetened Condensed Milk
- 1 (8 oz.) container Cool whip
- 1 (12 oz.) container Cool Whip
- 3 Heath candy bars
In a large bowl, mix chocolate pudding mix, water, and sweetened condensed milk. Fold in 8 oz. container of cool whip until there are no streaks remaining.
In a trifle bowl or glass serving dish layer:
- 1/2 brownies squares
- 1/2 pudding mixture
- 1/2 of 12 ounce container Cool whip
- remaining brownie squares
- remaining pudding mixture
- remaining Cool whip
- Top with 3 crushed Heath candy Bars
Refrigerate 8 hours before serving.

Recipe: Spaghetti and Meatballs

- Meatballs:
- 3/4 pounds Ground Beef
- 3/4 pounds Ground Pork
- 3 cloves Garlic, Minced
- 3/4 cups Fine Bread Crumbs
- 2 whole Eggs
- 3/4 cups Freshly Grated Parmesan
- 1/4 cup Flat-leaf Parsley, Minced
- 1/4 teaspoon Salt
- Freshly Ground Black Pepper
- Splash Of Milk
- 1/2 cup Olive Oil
- Sauce:
- 1 whole Yellow Onion, Diced
- 3 cloves Garlic, Minced
- 1 whole (28-ounce) Can Whole Tomatoes
- 1 whole 28 Ounce Can Crushed Tomatoes
- 1/2 cup White Or Red Wine (optional)
- 1/4 teaspoon Salt
- 1 teaspoon Sugar
- Freshly Ground Black Pepper
- 1/4 cup Flat-leaf Parsley, Minced
- 8 whole Fresh Basil Leaves, Chiffonade (optional)
- 2 pounds Spaghetti, Cooked To Al Dente
Preparation Instructions
To make the meatballs, combine meat, garlic, breadcrumbs, Parmesan, eggs, salt, pepper, parsley, and a splash of milk in a mixing bowl. Mix together well with hands. Roll into 25 1 1/2-inch balls and place on a cookie sheet. Place cookie sheet into the freezer for 5 to 10 minutes to firm up.
To brown the meatballs, heat olive oil in a heavy pot or large skillet over medium-high heat. Add meatballs 8 at a time, turning to brown. Remove and drain on a paper towel after each batch. Set meatballs aside.
In the same pot, add the onions and garlic and cook for a few minutes, or until translucent. Pour in whole tomatoes, crushed tomatoes, and wine, if using. Add salt, pepper, sugar, and parsley. Stir to combine and cook over medium heat for 20 minutes.
Add meatballs to pot and stir in gently. Reduce heat to a simmer and cook for 30 minutes, stirring very gently a couple of times during the simmer.
Just before serving, stir in basil if using.
Serve over cooked spaghetti. Sprinkle with extra Parmesan.

Plum Freezer Jam
32 sm-med plums, remove pits and chop
1c. juice, apple, white grape or Mountain Cooler Capri Sun
1pkg pectin + 3/4 tsp more, stir while adding (I used Sure Jell no/low sugar)
Cook until boiling hard!
add 1 1/2 c sugar - stirring continually
stir while rolling boil for 3 mins
use blender to smooth out chunks
pour into jars or freezer containers
makes about 6, 8 oz jars
